We then discover the Roman Theatre, a 6,000–seat amphitheatre dating to the second century AD – still used for cultural events and a striking testament to Amman’s ancient architectural heritage. We round off the day with a street–food tasting tour in downtown, sampling favourites such as falafel, sweet kunafa and refreshing sugar–cane juice – dishes vary but always showcase authentic Jordanian flavours. We then explore Shobak Castle, a dramatic 12th‑century Crusader fortress perched high on a mountainside, wandering its towers, gateways and hidden passages while enjoying panoramic views over the surrounding valleys.
