Pakoras Recipe - Indian tempura
Ingredients: • 3 potatoes cut into rounds approx. 5mm thick • 2 onions cut into fine slices • 1 1/2 cups gram flour • 1/3 tsp soda bi-carbonate • 2 tsp cumin • 1 tsp red chilli powder • 3/4 cup water • Oil to deep fry |
| Sieve gram flour, soda bi-carbonate and salt together, adding chilli and enough water to make a batter consistency. Heat oil in a wok to smoking point, reduce to minimum heat, dip the vegetables in batter and deep fry until golden brown and crisp. Serve hot with a mint or mango chutney. | |  |
